These wonderful flatbreads are the heart of any Middle Eastern dish and serve well dipped in smooth hummus or alongside koftes. An easy start to amateur bread making.
I am recently really enjoying exploring Middle Eastern cooking and new spice dishes. Coming into the kitchen to the smell of freshly baked za'atar flatbreads or heated up in the toaster the next day for lunch, there is nothing better! An amazing staple for any beginner which has the family begging for more.

Ingredients (makes 15):
500g strong bread flour
10g salt
10g dried instant yeast
30g unsalted butter
300ml warm water
olive oil, to cook
za'atar, to serve
Method:
1. Put the flour, salt and dried yeast in a large mixing bowl. Add the butter and most of the warm water, then mix with your hands to bring the dough together. Gradually add the remaining water until all the flour is mixed in.
2. Put the dough on a lightly floured surface and knead for about 5-10 mins until the dough feels smooth, adding more flour if necessary. Place it back in the mixing bowl and cover with a warm tea towel. Leave to rise in a warm place for at least 1hr.
3. Tip the dough back out onto a floured surface a fold all the air out of it. Tear into 15 equal pieces and roll each one into a flat circle shape.
4. Add 1 tbsp olive oil to a frying pan on medium heat and fry each flatbread until nicely toasted on each side. Remove from the pan, drizzle with olive oil and sprinkle with za'atar to serve.
