A savoury take on the classic cinnamon swirl, but an Italian version! Me and my sister needed something exciting to spice up our quarantine lunches and fill up some time, these were the perfect solution. You can get everyone involved and still whip some out in record time.
So we were very lazy and just used some shop-bought puff pastry which was left over from when I made pies, cause it needed eating up, but easily you could make your own. Here's a link for a good puff pastry recipe i generally use:
Prep time: 15 mins
Cooking: 10 mins
Ingredients
1 packet of shop-bought puff pastry OR the homemade version
Jar of red or green pesto
2 handfuls of parmesan cheese
Milk, to brush on top before cooking
Method
Preheat the oven to 180℃.
Roll out your pastry into a rectangle, roughly 20x30 cm.
Spread a thin layer of pesto onto it making sure to reach the edges.
Sprinkle the parmesan on top.
Roll into a tight spiral and cut off the ends.
Gently cut slices about an inch thick. I like to use a sharp knife with a slow sawing action to keep the spiral once cut, alternatively I know using plain dental floss achieves the same result.
Place on a baking tray and brush with milk for a golden brown look. Put in the oven for 10 mins until crispy.
Remove and serve immediately.
