Fancy Mince Pies

Perfect for a dinner party or just plain enjoyment. These are a twist on the classic and super classy for the parent-in-laws.

It appears like quite a feat and task but these are perfect for the Christmassy feeling and freeze very well to enjoy come Easter. Never made homemade mincemeat so just had to give it a go! Would recommend putting the orange in, even if you're not an avid fan, makes the mince so much more special.


Timings - 40 mins to make and 10 mins


For the mincemeat (makes 12):


  • 2 cooking apples, chopped

  • 225g sultanas

  • 100g cranberries

  • 50g blanched almonds, chopped

  • 200g muscovado sugar

  • 1 orange, zest and juice

  • 1 lemon, zest

  • 1tsp mixed spice

  • 1tsp cinnamon

Other ingredients:

  • 12 sheets filo pastry

  • butter, melted

  • icing sugar, to dust


Method:


1. Put all the mincemeat ingredients in a large saucepan over a medium heat. Allow to cook, siring occasionally, for about 10 mins or until the apples start to soften. Remove from the heat and cover with a cloth to continue to infuse.


2. Preheat the oven to 180℃/160℃ fan. Place a baking tray in the oven to give the pies extra heat from the bottom. Grease a 12 hole muffin tin with oil and set aside.


3. Lay the sheets of filo pastry on top of each other and but in half. Keep any filo not being worked on under a damp tea towel to ensure it doesn't dry out. Brush some melted butter onto one sheet and place another one on top at an angle. Repeat and line each of the muffin tins.


4. Divide the mincemeat equally among the muffin tins and spoon into the cases. With any leftover filo, cut into strips and scrunch up onto the cases for decoration. Brush lightly with the melted butter and put into the oven for 8-10 mins or until the pies are golden and crisp.


5. Remove from the oven and serve hot - best eaten immediately after cooking.
