This is so simple to make but still indulgent, with crème fraîche adding a smooth finish to the paprika spiced tender beef. Soft accents of spinach make a bit more healthy and colourful.
Really yummy for either a family dinner or romantic night, made special by the super easy preparation. A delicious take on standard beef strips, packed full of flavour and colour!
Timings - 30 mins
Ingredients (serves 2):
500g potatoes
150g mushrooms
15g parsley
1 lemon
275g beef stir-fry strips
150g spinach
1 pot crème fraîche
tsp smoked paprika
tsp paprika - add to taste
Method:
Boil a kettle. Wash the potatoes clean and peel if preferred, halving any larger ones. Transfer to a medium saucepan and add salt, covering in boiled water. Boil for approx. 10 mins until tender with a knife.
Meanwhile, thinly slice the mushrooms. Finely chop the parsley leaves and zest half the lemon.
Heat 2 tbsp oil in a large frying pan and fry the mushrooms for approx. 3-4 mins, until softened and lighter in colour. Remove pan from heat.
Season the beef. Heat tbsp oil in the same pan to a high heat. Add the beef and sir-fry for 1 min, until starting to colour.
To the beef, add the mushrooms, spinach, crème fraîche, smoked paprika and as much paprika as you would like.
Simmer for 3-4 mins, stirring until the crème fraîche has thickened, the spinach has wilted and the beef is cooked through.
Drain the potatoes. Stir half the parsley into the beef and season to taste.
Serve the beef with the potatoes, sprinkling with lemon zest and the rest of the parsley.
